Hi, I visited the Thailand Festival around Nov 2007 and tried the papaya salad and mango salad... Love it. So when my brother's MIL visited Singapore, I asked her to teach me.
This portion is for 1 person. Here it is:
THAI PAPAYA SALAD
4-5 pcs Garlic
4-5 pcs Chilli Padi
1 tbsp dried prawns (washed in hot water, do not soak it)
1 tbsp unsalted roasted peanuts
2 strands of long beans
1 tbsp Thai palm sugar
Pound the garlic till smashed or fine. Add and pound chilli padi till fine. Add and pound dried prawns and peanuts, coasely broken up. Finally long beans and palm sugar, pound till bruised.
Mix together with:
4 small tomatoes (sliced)
2 pcs sliced lime (squeezed)
1 tbsp brown sugar
a pinch of MSG
fish sauce
1 & half handful of papaya (shredded)
Taste to add seasoning ie lime juice, fish sauce or sugar.
The MIL uses Thai products only ... all her ingredients must come from Thailand. So the ingredients are purchased from the 2nd level supermarket of GM (Golden Mile Complex).
