I loved the curry chicken noodles sold at Hong Lim Complex(Singapore), near Chinatown MRT. Ate there long time ago before I knew how to cook. over the years, I found out how they cooked it by standing there to watch.
Serves 6 persons
Ingredients
1 large chicken(about 1.5 kg)
1 litre coconut milk(canned or packet ones)
10 pcs fried bean curd pockets(tau pok)
20 pcs fresh fish balls(optional)
salt to taste
2 sprigs of fresh curry leaves
500g yellow noodles
200g bean sprouts(remove roots, clean, washed, drained)
Makes about 300g of paste
curry paste ingredients
100g dried chillies(soak in water to soften, discard seeds)
10 pcs fresh red chillies
6 gloves garlic
6 pcs shallots(small red onions)
1 inch galangal
half inch tumeric root
2 pcs lemon grass
1 tbsp belachan powder(roasted, pounded)
200ml cooking oil
Method to cook the paste
1. blend paste ingredients till smooth.
2. Heat up wok with oil and add paste to cook over low heat till fragrant.
3. remove and set aside.
Method to cook the chicken
1. Use a large pot and add 500ml of water to boil
2. once it starts boiling, add whole chicken to cook over medium heat for 15 mins.
3. Remove and drain in tap water.
4. Once its cooler, chop chicken into smaller parts. set aside
Method to cook curry gravy
1.using the same pot with chicken soup(use for cooking the chicken), add 100g of curry paste.
2. Add coconut milk and simmer over low heat tilll it boils.
3. Add curry leaves, fish balls and tau pok to cook for 10 mins.
4. Add salt to taste.
5. Turn off heat and cover.
How to serve
1. Blanch bean sprouts and noodles in hot water to briefly cook it.
2. Add desirable amount of noodles and bean sprouts in a bowl.
3. Pour generous scoop of curry gravy, chicken, fish balls and tau pok over the noodles.
4. Toss in hot gravy to mix.
5. Serve immediately. _________________ Gina

Gina, thank you so much for sharing this recipe . I love the curry mee at Hong Lim too. But there's always a very long queue. Now, with this recipe I can cook my own liao *so happy*.

yeah..the long q really puts me off. so while I was queuing for a bowl of noodles, I stand there and see how they cook it..! I actually saw that the chicken was cooked separately like the way we cook chicken rice chicken..then the chicken was hung up to drain away excess liquid and oil. when someone orders the food, the chicken is chopped and added in the hot gravy to 'marinate' for a while then added onto the noodles and served  _________________ Gina

Wow... this looks really good.
Is Hong Lim the one in people's park. I know the curry noodles there is very good.
Gina, if I don't want to use dried chilli to make the chilli paste, can i substitute it with fresh Chili instead? How much fresh chilli = 100 g dried chilli?

Hi Gina
Tried your chicken curry noodle soup today & loved it! Since i didn't have the fish balls on hand, i just pan fried a handful of marinated ( with the ground paste) prawns & fish fillets & added them to the soup! Thank you for sharing the recipe
