My muffins is nut-free bcos my two boys don't like it with nuts. Texture of this muffin is very wet and soft. Nice.
Ingredients
150 gm (5 oz) plain flour
100 gm caster sugar
1 1/2 tsp baking powder
1 egg
50 gm (2 oz) butter or margarine at room temp
75 ml (5 tbsp) milk
1 tsp vanilla essence
3 banana mashed
50 gm walnuts/pecan chopped
Method

the texture looks more like Kueh than Muffin. So I assumed when you say "wet" its kueh like.
by the way, do you have problem with the muffin getting stuck in the paper cup and unable to remove easily? since that a few people here have that. Except me. i don't have that problem at all. That is why I suggest using paper cups as I do not want to brush the muffin tray and wash again. _________________ Gina

The texture you see comes from the mashed banana in the muffins. No I don't have a problem with muffins sticking to the paper cup at all. I prefer to use papercup bcos its easier that way. _________________ LeeLee

Made this today... Added some raisin instead of walnut coz my nieces dont like walnut too..

I tried it this morning, and it turns out kueh muffin.
I also tried out Gina's banana cake using cake flour, result is really good. |

I baked muffin twice but both times they turn out wet on top and its totally flat, not nicely doomed in the centre like in this pics? Why hor? |
