I created these for a customer who told me she's hindu vegetarian. I got it all mixed up about eating eggs and made this just for her. Only to find out later, she told me, "We can eat eggs" see stars

Oh well, the cookies still taste good. In fact, I baked an extra box and left it in the shop. Those who came by to shop tasted it and said its as good as Famous Amos Chocolate Chip cookies.

Happiness... grin

Ingredients
250g butter(salted)
150g soft brown sugar
1 tsp Vanilla extract
100g semi sweet chocolate chips(I use Hershey's)
1 tbsp Valrhona cocoa powder
380g Top Flour

Method
1. Melt butter in a microwave safe bowl till liquid.*
2. Add sugar, vanilla extract and cocoa powder to stir till well combined
3. Add flour, choc chips to mix till it forms into a dough.
4. Scoop out on baking tray, press down to flatten it.
5. Baked in preheated oven 180C for 20 mins.
6. Remove to cool on wire rack before storing.

Notes
You can boil it in a sauce pot over the fire/stove till its melted. Do not boil.

hey gina!!

long time no talk! hope all is well with you!

so i have a question...now - this cookie is without eggs which is great b/c isaiah (my little one - well - 3.5yr old now) is allergic to eggs amongst many other things.

wheat is another he's allergic to. SO! instead of top flour - what can i sub it with to be wheat free but still have the same end result?

i should say wheat and gluten free.

thanks!!

rendy

yes Rendy

you can subs the flour for something he can take.

There is a recipe I have that uses Almonds, Cornflakes and Rice flour, also no eggs. I hope he is not allergic to nuts. Smile

I did this without the cocoa powder. baked it at 155 degrees celcius thought instead of 180 as the first batch came out burnt.. cookies smell really nice and tastes yummy.

Thanks for the recipe! Very Happy
