THE HAKKA meat roll is a must-have dish during the first day of the lunar new year celebrations. In the past, the meat roll was wrapped in pork caul, a lacy and fatty membrane that encases the internal organs of the pig.
My mother would often have to pre-order the pork caul from the butcher at least a month ahead. These days, due to health reasons, she has substituted it with bean curd sheet roll.
