A recipe my mom gave me some years back. She never show me how its made or cooked. I had to trial and error at home. She learned this when she was picking up Malay cooking classes at CC donkey years ago.

We all loved this version she learnt. And have been using this recipe for all our home cooked Mee Rebus at home.

Over time, I added shredded chicken fillet on top as part of the garnishing.

A must keep recipe to share with all here.

Enjoy!



Ingredients: Paste:
1 inch Lengkua(blue ginger)
1 inch old ginger
15 small red onions
4 gloves of garlic
2 tsp pounded belachan
3 tbsp Tau Cheong(Preserved Soya Beans)
2 tbsp coriander powder
1.5 tbsp chilli powder
1 tsp cumin powder
1 tsp tumeric powder

For gravy:
400 g mashed sweet potato
1.5 litre prawn stock
300 g deep fried flat baby shrimps
2 stalks lemon grass(serai)
4 tbsp sugar
3 tbsp salt


Garnishing:
Sliced green chillies, tau geh(bean sprouts)
Eggs
Tau kua(sliced thinly)
Small limes, chinese celery(chopped finely)
Deep fried flat dried shrimps

Other ingredients:
Yellow noodles
Bean sprouts (blanch in hot water for 5 mins, drained)

cooked chicken fillet(shredded)..this is optional

Method:
1. Blend all paste ingredients together.
2. Heat up wok and add half cup of cooking oil to fry the paste till fragant(about 5 to 10 mins) Set aside.
3. Steam sweet potatoes with skin on till cooked. Peel off the skin.
4. Add into a blender with prawn stock and blend till smooth and creamy.


5. In a large sauce pot, add blended gravy to boil. Lower heat to simmer for 5 minutes.


6. Add paste and lemon grass and cook for 10 mins on medium heat.
7. Add flat dried shrimps, sugar and salt last. Turn heat to low and stir.
8. Scoop gravy over yellow noodles, bean sprouts and garnish with garnishing ingredients.

Very Yummy looking ...may i ask Mee rebus and Mee Java are they the same ??? Had Mee Java Goreng once .... it was very yummy ..but dont know how to make it so how? can u help Gina ..Thanksss cheers

I think in Malaysia its a different name. Here in Singapore, its called Mee Rebus. Must ask the Malay KC members here for advice on this. I really don't know.
