The only buttercream icing recipe I know of is the Wilton method. I find it too sweet on the cake. I am looking for a recipe that is not so sweet but yet excellent for decorating. Anyone knows of any?

hi hi, can anyone give me a reciple for buttercream without egg whites or meringue powder. would like to bake a cake for the kids without the commercial ingredients, prefer homemade simple ingredients.

in the end, i tried creaming butter + melted choco + icing together at fast speed. abit sweet, but at least without the risk of uncooked raw egg whites.

I understand your concern as I'm feeding my 3 young children too. However, I've read up and found out that for the sugar to melt, the temperature needs to be higher than the eggs, so if your sugar has melted, that means your eggs are pasteurized and it's safe for consumption. I have just recently convinced myself to make buttercream icing with egg whites.
