Its a dish I learnt from my friend who used to run a chain of Hong Kong style Tea houses in Singapore : Tong Shui Cafe. It was one of the dishes that was served in his cafe.

Today I cook this again for our family and invited guests for lunch(7th day of CNY 2012)

This is how the packet of Vietnamese Net Spring Roll sheet looks like. You can find this at the Thai Supermarket at Golden Mile Complex/Beach Road.



Makes 20 pcs
Ingredients
20 pcs of tiger prawn meat
5 sweet mangoes(diced, discard the skin and seed)
40 pcs of Viet Net Spring Roll sheet

Method
1. Devein prawn and mixed with diced mangoes.
2. Add a portion of prawn and mangoes into the sheet.
3. Fold and wrap once..then placed on another sheet to wrap. Means each pillow pack has 2 layers of the Vietnamese Net spring roll sheet.
4. Deep fry for 2 mins, drain excess oil.
5. Serve hot., dip with mayo or salad cream.

you mean to say the wrap will look like a half circle?
