There are 2 versions of Mango Ice Cream I did. This one uses fresh mangoes. The other one uses Frozen Mango Puree. The texture and mouth-feel is very different. This one is more chunky and you get to eat bits and pieces of mango.

The other one was more like a smooth gelato sort of ice cream. However, this one needs more attention..as you need to buy good mangoes and cut, slice and skinned.

Mango Madness Ice Cream
Recipe By Gina Choong


Ingredients
400g ripen Honey Mangoes(skinned, de-seeded and diced into small cubes)
300ml Thickened Cream
100g icing sugar

Method:
1. Divide the mangoes into 2 portions. Put one portion into the freezer to freeze for 3 hours.
2. In a blender, put the frozen portion with icing sugar, thickened cream and puree till smooth.
3. Turn off the blender and add in the 2nd portion(diced mangoes)
4. Give it a good stir to mix it evenly.
5. Freeze for at least 6 hours or overnight.
6. Serve ...!

Gina, is there a reason why icing sugar is used instead of normal sugar?

Hi Wai Fun

I used icing sugar because it melts instantly. If I use normal fine sugar, I may have a problem to whip till soft peaks with the cream.

Honey can be use to replace icing sugar. But so far, I have once with maple syrup..just once. It was really good..but maple syrup is very expensive and Adeline Heng bought me a bottle, I find it too precious to use it all.

When I made all these ice cream for the shop as samples, cannot use honey..coz I don't sell honey, plus honey a bit too ex for me to buy just to use. Smile
