|Been on my must-do list for home made ice cream for the longest time. Why? Because everytime we buy durians, it ended up being eaten than use to make ice cream with it. So this time, I told Benny to buy more so I can set aside some to try this.
I only made a small portion like 300g..it came out as good as those sold commercially or even better(self praise! )
Here's my tried and tested recipe
350g durian pulp
150g dairy whipping cream(or thickened cream)
80g icing sugar
1. remove durian pulp from fresh durians, keep in an air tight container and freeze overnight till its rock hard.
2. Put the frozen pulp, cream and sugar into a blender and blend till puree state.
3. Pour into a plastic container and cover it. Freeze for 6 hours or overnight.
4. Good on its own..serve cold or on a cone.
I set aside 50g of pulp and did a separate pulse-blend just to break up the pulp into mini chunks.
When the other ingredients are blended/mixed, I added these 50g of durian chunks and give it a good stir to mix it up evenly. Then freeze
So you can see the durian ice cream I have, you can see yellow chunks of durian flesh..so good..you want more!
