A spin off from my uncle Andrew's original recipe. Mainly because I didn't have lemon at home..only oranges. So a slight twist, the dish came out even nicer..



Ingredients
4 large mud crabs
2 cloves of garlic, finely chopped
2 eggs(lightly beaten)

Sauce ingredients
150g tomato ketchup
200g chilli sauce
juice from 1 orange
2 tbsp sugar
100ml water

Method
1. Kill and clean crabs. Set aside.
2. Heat up wok with 2 tbsp of cooking oil and add garlic to saute for 1 min.
3. Add crab pieces to fry for a while(about 1 min).
4. Pour in all the sauce ingredients and stir fry to coat evenly.
5. Cover the wok to leave it to cook for 5 mins.
6. Remove the cover, pour in the eggs and quickly stir fry as the eggs cook very fast.
7. Dish out , serve hot..!

Thanks for the recipe, Gina. So far I only did steam crabs with ginger. May I know if the chilli sauce used in this recipe is the Del-Monte/Maggi type?
