|Had to name this way because I shared the Brioche recipe several times here..!
This one is special because Bryan Wong from the popular "Knock Knock Who's there?" came to see me some months back to ask for help. He was to do 3 recipes and of course he wants to win as usual. I think he has alot more faith in me than I have for myself.
All his 3 recipes won the challenge that day..of which 1 was not mine. But Chef Gordon Ramsay's Beef Wellington. I told him to go and google for GR's recipe online that comes with full video on how-to. He had to improvise too as Bryan couldn't find all the ingredients needed for the Beef Wellington.
2 recipes from me.. Lava Cake and this Brioche. I told him the secret in having the brioche super soft and fluffy is the yeast and proving of the bread and to use Cake Flour..
So here it is..the recipe I used and the one I shared with him...
Yields one loaf tin (seen in my photos)
250g cake flour
90g fine sugar
1 tsp salt
1 tbsp instant yeast
50g butter(soften in room temperature)
1. Add all the dry ingredients in a mixer bowl and turn on the mixer to evenly mix the ingredients.
2. Lightly whip eggs with milk to mix and pour into the mixer bowl and continue to whip/knead.
3. When the dough comes together(about 3 mins of kneading), add butter and continue to knead till well mixed.
4. Stop the mixer, oil the pan/dish with butter..and leave it inside to prove.
5. Depending on the weather, it may take 30 mins to an hour to double in size.
6. Once its double in size, bake in preheated oven 180C for 20 mins.
7. Remove to cool before removing the brioche from the dish/pan.
8. Sliced and serve it with your favourite jams or hams..
Freshly baked bread is best consumed within a day or 2. Its not intended to be kept for over 4 days..Make enough to last for a day or 2.
