|This is an old recipe I had. Later when I met Auntie Noi(the Thai Chef who now works at Oriental Hotel), she told me that there are several ways to do a good Pineapple Rice.
I told her my recipe. She said its best to use Honey Pineapples or very sweet pineapples. The yellow colour is food colouring, as pineapple juice will turn brown when its heated up. I prefer to use Tumeric powder to make it yellow.
4 cups cooked rice
1 can pineapple cubes cut into smaller pcs
half cup pineapple juice(from the can) mixed with 1 tsp tumeric powder
100 g dried shrimps
3 tbsp Fish Sauce
1 tsp sugar
2 tbsp onion oil
1. In a wok, add onion oil and shrimps and stir fry till fragant
2. add cooked rice and pineapple juice and pineapple pcs and stir fry till evenly mixed.
3. add fish sauce and sugar.
4. Serve hot , sprinkle toasted onions and chicken floss(optional).
Why use canned pineapples?
Its naturally sweeter, less sharp in flavour. If not, use those Sarawak pineapples or Honey pineapples or over ripe ones.
If you use unripe ones, it will make the rice sour.
