Ingredients:
1kg chicken
1 can of coke light with lemon (best to use this, others are too sweet)
2 slices of ginger (cut into very thin strips)
2 tbsp light soya sauce (i use kwang cheong thye brand, diff brand will make this dish taste different)
1 tbsp of dark soya sauce
some spring onion cut into thin strips
half red chilli(w/o seeds) cut into thin strips

Poke the chicken with a fork
Marinate chicken in coke for 1/2hr
Stirfry ginger in 2 tbsp oil till fragrant
Add in chicken to stirfry till half cooked
Boil remaining coke in a small pot at add into the chicken slowly
Add into light soya sauce & dark soya sauce
Boil chicken till very little of sauce left
Add some corn starch(w/water) to get the "gow"
Add spring onion & red chilli stir for awhile before serving.

This is a tried and tested recipe. Made my dh ask for more rice!

Hi Mandy
I have tried this receipe and I must say, its wonderful!!
But, I always never reach the stage where the coke will dry up. Even after cooking for 30min, its still very watery island

Hi bluemoon,

Thanks for the compliments. I think you'll have to open the wok cover and let the water vapour evaporate so that the coke will become very concentrated. I usually manage to get the very little and thick gravy.

I did open up the wok. Let me ask you a few qns:

1. Do you use the whole can of coke?? I used maybe only half coz its just too watery. If I add the whole can, it will be coke chicken soup island

2. How long do you simmer the chicken for the gravy to thicken?? For me, I stop at 30 mins fearing the chicken will be overcooked, I just thicken the watery sauce with cornstarch.

3. When you marinate the chicken, is your chicken very dry with no water?? Mine has some water from cleaning the chicken, didnt pat dry.

4. I used medium heat.

I really cannot think of what went wrong.

I normally cook half the recipe only. So i use half can of coke.

I usually let the chicken drip dry and use a kitchen tissue to dap the skin dry.

4. I used medium heat.
I used high heat to keep it boiling.

Gina, that's my dh's birthday. hahaha He got the same birthday as my ds.

Ok ...this is my first time here ..love to get ideas and give aswell abt cooking Smile I am going to try this recipe sounds intersting i think will use some coke to marinate and boil the rest ..but on high flame so that it doesnt take too long .Will give a try and let u ppl know how it turned out ,,also going to use boneless chicken since no one in my household likes to get into the bones! Very Happy

Very Happy Ok here i am after trying out the coke chicken !!!!! :lol: Must say it turned out well i had no coke light with lime instead used pepsi lemon Very Happy but it turned out Yummy!!! and dry to as i wanted i left it marinated for abt 1hr plus had no problems with the pepsi drying and did not use cornflour. Have another similar one buttt with Brandy ...if anyone wants to try ..its yummy too ok not much of putting my ingrediants in exact portions while cooking just use my instinct so please if anyone tries this one out and need to know somethings please do ok Smile
take boneless chicken u can even use with bones cut into slightly bigger than bite size peices add chopped onions (i usually put more) finely chopped garlic and ginger if u have the paste better still in equal amounts and chopped tomatoes ,chiili powder ,salt , bit of curry powder Cook it all in slightly deep pot until almost done. Lastly add some brandy and cook till it dries up Serve it garnished with freash corrriander and Woillaaa!!

Hi ladies,

I tried this dish at the weekend and it turned out real good! My hubby like it alot. I never tried any type of coke chicken before and i like the taste of it! One of my friend been looking for this recipe for long time and she tried it yesterday and she likes it alot too eventhough she said it doesnt taste like what she had before!!!

It is a real easy and delicious dish, really no harm to try out ladies !! Wink

This is indeed a simple to prepare and delicious dish. Here's my version of Coke Pork Ribs :

Ingredients
500g of pork ribs
1/2 can of coke
2-3 tbsp of Kee's char siew sauce
1 tbsp of oyster sauce
some pepper to taste

Method
-Marinate pork ribs with char siew sauce, oyster sauce and pepper.
-Keep in fridge for 1-2hrs. The longer the better, usually i marinate and leave in fridge after my market trip in the morning.
-Cook the pork ribs in a flat pan. With no oil needed, simply empty the marinated pork ribs into the pan, start fire and pour in 1/2 can of coke.
-Leave the pork ribs to boil with occasional stirring until the coke has evaporated to a slightly sticky texture. This usually takes about 35mins for me.
-When the coke has evporated to a sticky texture and coat onto the prok ribs, it's time to dish out and serve.

My family loves this dish! Very Happy

Hullo all! I tried the coke chicken recipe y'day. I turned out ok, but I couldn't get the coke mixture to thicken like Mandy described. Also, am I supposed to add the coke used for marinating together with the chicken? I did and it became too watery to stir-fry. I was boiling the chicken all the way.

Very delicious! DH ate all of it, leaving me only gravy for lunch today!! hehe.. thanks Mandy! :lol:

Puckers: I add in cornstarch when the gravy was boiled to the lowest level. Then I kept stirring till I get the thicken mixture. I throw in the chicken 1st, stir fry for awhile then add in the coke mixture that was 1stly marinated with the chicken. Oh ya, I halved the recipe too & cut the chicken into bite size pieces as DH prefers it this way...Hope this helps.. Very Happy

Never dared to try to use coke for cooking. Mainly becoz DH dont really like coke, but after reading and seeing those pics has really motivated me... I'll try this dish soon. Wink

Stef, this dish after cooking wont have any coke taste at all, infact, if i didnt tell my dh coke was used in this dish, he wouldn't know too.. Yep, you should try, its good! I couldnt find coke light with lemon, so i substitute it with coke light and add a splash (half a lime) of lime juice to the dish. it taste delicious nevertheless! Hope this helps.. Very Happy coffee

I've tried this recipe d week before. My 3 girls all loved the gravy. I don't have coke light with lemon so i used regular coke with sliced lemon to marinate.

In fact, i used coke light with lemon is because i don't want it to be too sweet. And the tinge of citrus does enhance the taste too. Very Happy

You can use coke when cooking "Lor Ark" (Stew duck) & Tee-Ka. The duck will look puffy & big..........hehe!

I made this for dinner tonight - took really long for the liquid to boil down and thicken. So no time to take pictures 'cos everyone was so hungry. Thanks for sharing this recipe, it is really nice. Next time, I will start cooking earlier! Wink

Hi Simonne, I used the chicken thigh and it was ok. When I said "long", it was not a few hours but about 45mins to 1 hr of med-heat boiling. But if you use half can of coke plus high heat boiling, it will probably be quicker.
