Hi Gina,
What is tapai ? To be very honest with you i have very vague memory of it. I know i love to eat it . It taste a bit soury and not very sweet. It look like a steam kuay. Sorry, not much i can say about it. Like I said I was very young then :lol: _________________ Lena. |

Tapai is fermented rice, with the recipe somewhat similar to the glutinous rice that lena gave. |

Tapai / Tape (that's how I called it) has many variations. You can make it using black glutinous rice, white glutinous rice, and tapioca (ubi). You can eat tape directly or you can mix it with some southeast asian drink for example es campur (it's almost the same like ABC in M'sia), es teler or you can even mix it with ice cream, and yogurt.
These were my experiences eating tape when I was back home in Indonesia.

I am glad you finally got what you wanted. Is this the yeast the medical shop's uncle were telling you about?

I got it from another shop that sells food stuff(soya sauce, oyster sauce). the uncle at the medicinal shop near my place don't have it.
..about termites..I pass by Upp Serangoon and saw new houses being built. must be alot of sand, dust and mozzies near your place. _________________ Gina

Yes i was thinking of that too. But not very sure. Anyway i am hoping it's not the sweet smelling glutinous rice wine!

My mum will be coming over here for a holiday in about 3 weeks' time. She has promised to make to tapai for me. I think she did mention about the one using tapioca as well. Will ask her to make both when she is here and will take some pics too.

Hi Lena
Sorry, my mum has come and gone. She did make the tapioca tapai but i didn't manage to take pics of it.
Method is easy. Cut the tapioca into chunks and steam till soft. After it has cooled down, place it in an earthen ware pot or pocelain pot. Break a little of the yeast ball (Ragi in malay) and break till up till it resembles powder. Add a little sugar to it and add it to the tapioca. Mix well. Cover with lid or cloth and leave it in a warm place to ferment for about 3 days.
After 3 days, your tapai is ready.
Tried it, but didn't really like it. It is a yeasty taste. My mum likes it. |

Tina, thank you. Not to worry about the picture, it so thoughtful of you to come back and tell me the outcome of it.
Like I said before it was a very long time ago I had eaten it so can't make any comment. All I know is I used to like it a lot. :lol:
Yeasty taste; could it be that the yeast is too much?

This is the tapai pulut that I grew up eating and love:

Being cooked and later wrapped in banana leaves makes this tapai very nice.It has to be sweet, not too sour or yeasty.
The other one is the tapioca one which I love but mum told me that is more tricky to get it sweet and not sour. If too hot, it goes sour very fast. It must be warm but not hot. Like the tapai pulut, once 3 days is up, keep in cool place or a fridge to slow/ halt fermentation.
Tina's mum recipe is a good one but alot hinges on the brand of yeast ball/ragi you get. I guess, try and see!
