This is one dish which I concocted and enjoy very much.It is rather spicy but you may reduced the dried chilly if you do not want it too spicy. NB: You may substitude with sotong(squid) if you prefer.
(oops, no pics though).

Ingredients:
1 kg Prawns
15 Dried Chillies: soak and when soft, drain and cut to bite size.
1 stalk of Curry leaves (about a hand full)
Chopped Garlic (lots of it)
3 tbsp oyster sauce
2 tbsp oil

Method:
1) Marinate the prawns(sotong) with the Oyster sauce for 1/2 hr before cooking.
1) Heat wok and pour oil into it.
2) Put in dried chilly and curry leaves and fry till crispy.
3) Put in chopped garlic (lots of it) and stir fry for awhile.
4) Pour in the prawns and fry till it is cooked. You may add a little water to help the prawns to cook and to prevent the wok from burning. The final result should be like a coated sauce over the prawns.
NB: for the sotong, add water too and stir fry till sotong is cook and there is a little thick gravy.You may test taste the 'sauce'. If it is not tasty enough, you may add a little salt if you desire.

Hi Ros,

Thanks for yr fabulous recipe.. I tried it last Friday and it was really nice and spicy. My hubby and I love it so much.. We finished the whole plate! Razz

This one sounds nice ....what if i use thinly sliced chicken ??? will it turn out nice ?? Smile
