This recipe is based on the recipe from The Naked Chef:
Ingredients:
8 large potatoes
apx. 240ml evaporated milk
3 generous tbsp butter
Salt and freshly ground black pepper
Pinch of ground nutmeg
Parsley flakes (optional, for garnish)
Method:
Boil the potatoes in boiling salted water until tender. Drain, peel skin and mash until smooth.
Add the milk, butter, seasoning, and nutmeg and mix well into the mashed potato. Garnish with parsley flake if you wish.
Note(s):
* The original recipe uses 1/2pint of single or light cream.

Instead of boiling the potatoes, baking them will yield a different flavor. Boiled potatoes have a waxy feel while baked potatoes will have a slightly powdery feel.
As for garlic, I found it very good if the garlic is roasted. Just cover a clove with virgin olive oil and wrap in foil to be baked with the potatoes. The garlic will mush very easily and this goes well easily when the potatoes are mashed. |

have you tried the China Fragrant Garlic? Its very nice..!
this is how it looks like:
its the whole bulb. Its not as strong a flavour like the local ones. Its quite mild. But very fragrant. Now I must have this for everything I cook these days. _________________ Gina

Personally, I prefer steaming potatoes versus boiling. |

About 30 minutues depending on how large your potatoes are. Steam them whole. |

If i skip the nutmeg, will it make a great difference to the dish?
To add in garlic, do i just throw in freshly chopped ones?  |
