At the first glance, I thought it's Wai San (淮山).

But since got no powdery look and it's slightly off white colour, it looks more like Bei Qi (北芪) (or also known as Huang Qi (黄芪)) to me instead.

From the Eu Yan San website ..
look at Item 130

http://www.euyansang.com.sg/others/content/en_US/c_med_herbs/herbs_types/general_herbs_list.php?nav_type=NEXT&first_no=46&last_no=50&herbs_type=0000000030

Huangqi, Astragalus (Astragalus membranaceus)
Warm. Influences the lung and spleen channels. Benefits the Qi and blood, tonifies the middle, raises Yang Qi, supports the protective Qi, reduces water retention and encourages the discharge of pus. Commonly used to treat fatigue, diarrhoea, prolapsed organs, spontaneous sweating, severe loss of blood, edema, chronic sore and paralysis.

Mingle

to wrap up this chicken is similar to the Emperor Chicken style. The purpose is to seal the herbs/flavourings within the chicken inside the foil. The foil, being aluminium, helps to keep warm and retains heat inside.

Ideally you would serve each person one aluminium packet of chicken wings. When you open up the foil, the flavour emits..

If you use the whole chicken, you need to make sure that the chicken is fresh not frozen and thaw. Or it will not be cooked thru.

Beancurd

you're welcome! After 20 years of IT and computing..my mind is too analytical. Also, being teaching Computer subjects for so many years to people who are computer illiterate, I have to find new ways to bring my message across.

Just made this for dinner. I didn't have tang gui and that flat herb but I tried it anyway. Also ran out of aluminium foil and just steamed it without wrapping up the chicken wings. Tasted pretty good and husband liked it. Thanks! Smile

The flat piece of herbal seems to be "Pak Kei" in cantonese. Dishes using this herbal usually taste sweeter.
