I didn't have enough of the larger type of aluminium cups. so i used the smaller ones. After baking, it look like the Portugese tarts! But its actually Quiche. I used frozen Turkey Franks(sausages) and added Rosemary herbs to heighten the flavour. The pastry was kneaded by hand, a lot of work..but truly heavenly as it melts in the mouth!

I will fix the step by step pics later..but here is the recipe now.



Ingredients for Pastry Dough:
300 g plain flour
100 g cold butter
4 tbsp cold water

Method for Pastry Dough:
1. Sift flour in a mixing bowl
2. Add cold butter to it and rub it with your fingers until it resembles breadcrumbs.
3. add cold water to it and knead into a dough.
4. Set aside for 30 mins.

Ingredients for Fillings:
3 pcs of Turkey franks(diced)
1 white onion(diced)
1 carrot(diced)
1 potato(diced)
100 g chicken fillet(prev. cooked in water, shredded)
3 tbsp olive oil
1 tsp rosemary leaves(preserved)
1 tsp Basil leaves(preserved)
1 tsp salt
1 tsp pepper

3 eggs
150ml milk

Method:
1. In a frying pan, add olive oil and stir fry onions.
2. Add carrots, potatoes and stir fry for 2 mins.
3. add sausages, chicken, and seasonings
4. Turn off heat, set aside to cool completely.
5. in a separate bowl, beat the 3 eggs and add milk to it.
6. Add cooked fillings into egg milk mixture and stir to mix evenly.
7. Roll out dough on a flour table.
8. Using a round cutter, cut and line each aluminium cup with pastry dough.
9. fill each pastry cup with 1.5 tbsp of fillings plus liquid.
10. Baked in preheated oven 200 C for 25 mins.
11. Serve hot!

left side of arms aching now! :cry: I should have made more. Only got 10 cups. And now left only 4 pcs. When Benny is back later, I think he is going to grumble. Embarassed

Hi Gina, may I know how many mini quiches will this recipe roughly yield?

Thinking of making this for a party. =)

sorry, I cannot remember how many mini tarts it can make. so long ago. how many do you need to make for your party?
