Grilled Fish stuffed with Sambal Chicken(recipe and pic)

ready to dig in Razz


go to http://gchoong.fotopages.com and look for the entry of Grilled Fish stuffed with sambal chicken for the step by step pictures(shows how to stuff the chicken)

Ingredients
2 fishes
100g minced chicken
1 egg
2 tbsp Sambal Chilli(get the recipe from Asian Sauces/Pastes)
2 small green limes
1 large piece of banana leaf
aluminium foil

Method
1. To prepare the fish, use a large cleaver knife and slice from the top of the fish.
2. Slowly cut by doing a sawing motion to slice the flesh away from the centre bone/spine.
3. Do this for both sides of one fish.
4. in a small bowl, add minced chicken, sambal chilli and egg to mix.
5. Stuff each side of the fish with 1 tbsp of sambal chicken mix.
6. Place each stuffed fish on a piece of banana leaf.
7. Place this on a piece of foil. Make sure the foil is large than the fish.
8. Fold up to make a bowl like structure/case.
9. Cut a piece of leaf to cover the fish.
10. Grill in preheated oven of 200C for 20 mins.
11. Remove/discard the top banana leaf.
12. Remove the fish and place on a large plate.
13. Drizzle freshly squeezed limes on top.
14. Serve immediately.

This is so easy to make when you have sambal chilli available. and it taste so good... I love it.

Next time, I think I will just make the chicken stuffing and pan fry it. It's so simple and yet delicious!
