my mom taught me to do this. She is a perfectionist when it comes to food preparation. Her method of cooking porridge is very elaborate. When my girls are with her, she does the elaborate double boiled porridge for them. when my girls are with me at home, i just can't be bothered with the double boiled method. As it takes up so much time preparing and cooking it. I will share with everyone her double-boiled porridge. And also my quick and easy way of cooking nutritious porridge too.

Ingredients:(for lunch only, 1 serving)
4 tbsp of cooked rice
200 ml chicken stock
1 tsp young ginger (sliced finely)
1 clove of garlic(smashed to break it)
Fresh cod fish or grouper(about 2 tbsp, remove bones, sliced thinly)

Method:
1. in a sauce pot, add chicken stock to boil.
2. when it is boiling, add rice, ginger and garlic.
3. Boil for about 5 mins. Turn off fire.
4. Pour rice/stock/garlic/ginger into an Earthern pot and cover it.
5. Put the earthern pot in a larger pot and fill it with water.
6. the water level SHOULD BE up to half way of Earthern pot.
7. Put this larger pot over a hot plate burner or over charcoal stove.
8. Double boil for 45 mins.
9. At around 40 mins, add sliced fish in the earthern pot, cover.
10. Let it boil for another 5 mins.
11. Remove and serve.

Notes:
Ginger is to prevent "wind" in baby tummy.
Garlic is to kill bacteria
No salt or any other seasonings added.
4 tbsp of cooked rice yields a full bowl of porridge.

Gina,

What you use to cook the chicken soup stock? Lean Pork or ????

What is a Earthern Pot? Can i use slow cooker instead?

Please advise me, i very poor in cooking ,after 2 kids still cant cook well and now working hard to learn,hehehehe Embarassed

Here it is. You can get this from most departmental stores or at Chinatown.





Cannot remember how much it costs. I bought this long time ago. This is also the pot used to make those double boiled tonic soups..!
