This is from my cooking class conduct by Mdm Ee Kim San, I think its very nutritious, so share it here, very simple n easy.

Ingredients:

4 - 5 tomatoes (middle-size)
2 eggs (beaten)
1 stalk of parsley
1 pc of chinese silken beancurd (optional)


1 tbsp of cooking oil
2 1/2 bowl of water
1 tbsp of light soya sauce


Method:

1. Soak the tomatoes in the hot boiling water for 1 min, then wash thru cold water. To peel off the skin - slightly cut a cross from the back centre of tomato, then start to peel from the base downward. Then put aside.

2. Cut the tomatoes into half then cut into 9-parts.

3. Put 2 tbsp of oil in the wok once the oil is hot, off the fire, then put 1 tbsp of light soya sauce.

4. Turn on the fire, put in the tomatoes to fry.

5. Once the tomatoes gives a fragnant smell, add in 2 1/2 bowl of boiling water, let it boil in the wok. Add pepper.

6. if wan to add beancurd - once tomatoes in the wok is cooked, that means the soup is boiled, add in the toufu. Then let the soup boil again.

7. Once bubbles floating in the soup, off the fire, add beaten eggs and cover the wok for 3 mins.

8. Then open the cover, sprinkle with parsley, it will be ready to serve.

just want to check with you..is it okay for you to share her recipes like this..online, I mean? Maybe you should ask her for permission first.

Because what she teaches in a CC, people are paying to go and learn. At KC, membership is free. In a way, I see this as a threat to her rice bowl. I may be a bit too sensitive about this, but I hope I am not wrong about this.

Please ask her when you next see her for classes.

Jingle,

I am 2 years late - but made the tomato soup for dinner today, and it was yummy, simply delicious.............

I am learning how to cook (after being married for 10 years), and this is the first time, my better half praised my cooking. I am on cloud 9!!

I chance upon this recipe when searching for cooking ideas today. So decided to give it a try since the ingredients and method are simple enough. The kids love the soup! I added my own variation of garlic and salt seasoning when frying the tomatos and a little sesame oil into the soup.
