Indian Vegetable Curry(recipe and pic)

..oops..sorry Giselle..i thought I have already posted it. Thanks for reminding me.



Ingredients
2 medium red onions(quartered)
2 brinjals(cut into long strips)
100g Califlower (cut into mini flowers)
1 potato(cut into cubes)
3 tbsp Olive oil
1 tsp salt(more or less to taste)
300ml coconut milk(i used Evaporated milk)
2 sprigs curry leaves
1/2 tsp tumeric powder
200ml water

Spice mix
1 tsp Black mustard seeds
1/2 tsp Cumin seeds
1/2 tsp Coriander seeds
1 dried red chilli(soften in water)

Method
1. Heat up olive oil and fry spice mix till fragrant.
2. Remove and blend till paste like
3. Add 1 tbsp olive oil to wok to heat and add onions to stir fry till soft.
4. Add spice mix, and water, tumeric powder to heat.
5. Add vegetables, curry leaves and milk to simmer over low heat for 10 to 15 mins or when vegetables are soft.

Notes
If you want this to be extra spicy, add 5 to 10 pcs of Dried Chilli.

Thank you Gina! Your curry always looks so good! I don't have curry leaves but I just can't wait Smile ... turns out lovely. I think there's an Indian grocery not far away from my home, hopefully I'll get what I need.

Hi Gina

Me, being a novice in cooking.. Cant blend the spice into paste coz the quantity is too little for the blender to work! island So, there are little little spices floating in my curry... :lol:

yah, I was about to ask you what are those black spots :roll: you can always make more for easier blending..then freeze the rest of the extras. Next round just thaw, add to pot to cook mah.. coffee

I have made this again yesterday. This time it looks more red coz I put in 6 pcs of dried chilli. I also used evaporated milk and added in lady finger.
