the book was from my aunt. She bought it and while at her place last weekend for my nephew's birthday, I saw the recipe was rather interesting. So I borrow it. Think I will return the book to her soon.




Ingredients
170g Rice Flour
1 egg yolk
1/2 tsp salt
120ml hot water
120g sugar

Method
1. mix flour with salt and add hot water to stir.
2. Once its cool enough to handle, add egg yolk and knead into a smooth dough.
3. Roll dough into long tubes, press down and use a fork to press to get long strips on the dough.
4. deep fry till golden in colour.
5. Remove and drain on paper towels.
6. Add sugar on a frying pan and turn on the fire.
7. Turn the fire to low and when sugar starts to form into crystals, add rice sticks in and stir fry to coat.
8. Stir for 1 min.
9. Turn off heat.
10. Keep in air tight container.

Notes
The book recipe says 225ml water to mix with the flour. Once I added that, it turn into a sticky batter. Thus I knew something was not quite right at all. By the time the yolk was added, the batter turn even more watery. I added more flour..about another 150g more just to make into a smooth dough.

Also, it says the sugar must add water. Which is again wrong. By adding water, it became a syrup instead of crystals form.

interesting recipe...until i realize have to deep fry :shock: ...aiyo...so ma fan...can bake r?? :roll:

dunno leh. Embarassed actually it taste like the kacang putih snacks..you know the one that looks like bean curd stick and coated with sugar?

not so sure leh...but ur caramel sticks very tempting coz i like caramel...will try it when i have time....den mayb can try to improvise so dat can bake...Thanks Gina!

Hi Gina, you have to keep the syrup over heat after adding the water and keep stirring,the lumps will dissolve. Very Happy

in the end, I just did it like the way I did with Roast duck..the sugar caramelised..thus i decided to call this Caramel Sticks. The book recipe called it Sugar Rice Flour sticks.
