Pork with Watercress, thai basil, wolfberries

1 tbs dried wolfberries (gei ji) soaked in 3 tbs water
300g watercress (use only tender shoots)
100g thai basil (discard stalks)
1 large onion (peeled and diced)
2 cloves garlic (minced)

200g minced pork (preferably shoulder/belly)
marinated with 1 tsp light soy, 1 tsp sugar (optional),
