These are the third cookies they made:

1/2 cup soft butter
1/2 cup sugar
1 egg
1 1/4 cup flour
1/2 cup ground almond
1tsp almond essence or vanilla essence

Preheat oven to 200C. Cream butter and sugar together. Bea in egg, essence and almond and gradually mix in flour till well blended. Drop by teaspoon the mixture. Bake 5 - 8 mins until cookies are lightly brown.

Can i use chinese almonds for this recipe?

I am not too sure. but you can get ground almonds from NTUC in the baking session.

Chinese almonds as in nan bei xing (north and south almonds)... the type used to make sweet soups (tong shui) and double boiled soups? I doubt so... those are generally not used for baking
