I'm going to get some really cute chocolate mould and have read through the threads but I couldn't find the recipe to do it. Hope I can get some help here :

1. Is it just Compound Chocolate that I use? Which is a better brand?
2. How do I prepare the chocolate? melt it till it soft?
3. Do I just brush the mould with the chocolate or fill the mould with chocolate?
4. Do I need to prepare the mould? I read that I shld wipe the mould with corn oil, can I use canola oil spray?

Thanks in advance for any info.

Biscuit
1. Get chocolate with the highest content of cocoa butter, 75% is most used. Or get candy melts.
2. Can be microwaved, but you got to do it slowly 30 seconds at the time... or your chocolate turn to grits. OR melt chocolate over the lowest heat available. OR over a pot of hot water.
3. Could be done either way. If you want to fill the candy then brush chocolate on the walls then add the filling... leaveng space to place the bottom. Do not ovet fill.
4. I do prepare the molds... up until I learned there is a better way I used vegetable oil... but not in excess... got to be a thin coat. The best thing to grease a mold with is edible cocoa butter if you can find.

biscuit,

I can teach you.. coffee just that you need to find another 5 more persons to join you. I can hold the class at my home and give you a full DIY class teaching you how to do all the chocolates you see that are posted here.

this class is best conducted during the weekends.

let me know.. Wink

its S$20 per person. Many of the members here came to my place to learn how to do this. I also teach the kids too.

I need to have at least 10 persons to start a class. the price has gone up to $35 per person now. instead of $20 per person.
