Lemon Grass Sambal

Yields 300g
Ingredients for sambal
15 pcs fresh red chillies
5 pcs fresh chilli padi
1 tsp belachan(dry roasted, pound into powder)
20g Dried shrimps(blended till powdery, do not soak in water)
4 stalks of Lemon Grass
2 pcs medium red onion
1 tsp Tumeric powder
5 small red tomatoes
150ml corn oil

Method
1. Blend all the ingredients together except corn oil.
Do not blend till very fine or smooth. You should be able to see tiny bits of chilli or onions.
2. Heat up wok with corn oil and add paste to fry over medium heat for 30 mins or until the mixture is drier.
3. Leave to cool completely before storing in air tight glass containers.

Notes
1. I do not add salt, sugar or MSG.
2. If you soak the Dried Shrimps, you may need to add salt later.
3. Can be kept in the fridge for upto 2 weeks.

Gina,

Is this the same as dried shrimp sambal where you can spread it on toast?

not quite..its more lemony in flavour due to the use of Lemon grass. its sweet due to the tomatoes too. Razz

Hi Gina,

I had make this and the taste is great, go very well with my nasi lemak rice. But I had problem with the texture. It's very dry , lumpy and there's a lot of fibre from the lemon grass. It does not blend with the rice at all. Not enough oil or water?

try adding more oil to fry. Oil will keep it more smooth. Also, you may need to get a good blender to blend the lemon grass to fine bits. Mine blended the lemon grass to very fine. yummy
