This topic is just to show you how to prepare the gluten to make into mock rolls or Char siew.

Place gluten on a large piece of plastic


Form into a long roll, roll up the plastic sheet. Pull to tighten the grip.


After rolling up, pull the 2 open ends together and fasten it with a rubber band


Put this into a plate or plastic container and leave it in the fridge for at least 4 hours so that the shape stays firm and rolled up.

There may be more water later on. Discard the excess water. And use the rolled gluten as per your recipe.

ahh... thanks for posting this Gina.
My gluten looks exactly like yours at the first step. I just did not do the rest of the steps and letting the gluten rest first Embarassed

I redo these extra steps for you lah! coffee so its easier for you to understand and for others who are just starting out to make veg char siew.

using plain flour will make the gluten a bit softer. You can try using just Bread flour. the gluten will be more firm.

sometimes..especially now, I have no breadmaker anymore. with leftover bread flour, I use it to make gluten the last time.
