Here's my recipe for Rhubarb-Blackberry pie, perfect for this time of the year, yet you don't have to feel quite as guilty when induging it!

The crust has half the fat, but believe me, it is flaky and buttery and does not taste like I've cut the fat. The lemon juice helps with the flakiness of the crust.

- 2 c all-purpose flour
- 3 tbsp Splenda

Thanks for the recipe Pungaput. If I don't want to use Splenda, can I sub with regular sugar? is the ratio 1:1?

Yes, for sure. It's the same ratio in cups, unless you're weighing it (Splenda is considerably lighter than regular sugar).
