UDANG ASSAM aka Tamarind Prawns

800g medium grey prawns, unshelled, marinated with 1 tbs sugar
150g tamarind pulp soaked in 150g warm water, sieve out thick liquid paste, discard seeds and fibres

1 large onion, cut rings
3 cloves garlic, chopped
1 tbs finely diced ginger
2 stalks lemon grass, use bulb sections only, bashed

Rempah: Finely grind together
4 shallots
4 red chillies
4 buah keras (candlenuts)

Ster, this is so yummy! We, the Vietnamese, also have a similar dish but with less gravy. my mom cooks them very well. Smile

i remember eating a cockles version with my viet friend at a vietnamese restaurant in singapore. and it had to be specially ordered with the chef as she knows the restaurant owners very well. its not on the menu.

its a sticky tamarind sauce with some leaves (think it was lemongrass) and not forgetting the huge and fat cockles inside those large cockle shells. very deep impression...and hoping to make it at home one day.
