|Because of the ingredients used, it wouldn't be classified under Asian poultry, so here it is.
This is for a medium size duck
3 tablesp paprika powder
3 tablesp thyme powder
2 tablesp garlic powder
Mixed all the spices together and rub all over the duck, inside and outside.
When it is thoroughly cover by the spices, drizzle light soya sauce on the duck and rub on the skin.
Put seasoned duck into a plastic bag, tie it up and put into the fridge overnight.
Next day, bring out the duck and air it for 1/2 a day
Roast duck in a hot oven 250 C until duck is cooked or about 45 mins.
For hygiene purpose, I cover it with plastic bag.
Ready, steady, in it goes
45 mins later
