Recipe came from a friend who runs his own restaurants/bakery. He tells me that the ones sold outside had sponge gel or cake stablizer added to it. So that the donut have a longer shelf life and stays soft, spongey even if it not eaten on the same day. for home consumption, we tend to make more and eat more, he suggested not to use cake stablizer.

the texture of this donut is similar to the ones outside except that its extremely soft like the ones I have tasted the other day. But still, I prefer this recipe over the Baked Donut version.

The only setback in this recipe is that you need to get a donut tray..see picture below. The batter is very liquidy like a cake batter.

Makes 24 mini donuts
Ingredients
250g plainflour
80g sugar
1 tbsp baking powder
120ml milk
1 tsp salt
1 egg, beaten
1 tbsp melted butter
1/2 tsp vanilla essence

Method
1. Mix flour, sugar, salt and baking powder in a bowl.
2. Mix butter, eggs and milk together.
3. Pour wet ingredients into flour mix. stir to mix till it forms into a sticky batter.
4. Pour batter into donut tray (about half full).
5. Baked in preheated oven 180C for 10 to 12 mins.
6. Remove to cool before decorating.

Notes about using LG SolarDom Oven
Baked at Conv function, set to 180C and baked for only 10 mins.
no need to preheat.

I got mine from Gim Hin Lee. very ex! S$10 each. the ones I often see are at Tangs, Taka and also at Chong Trading. but never remember the price.

now I can at least understand how those shops have their donuts all so evenly shaped. Cheeky grin

I have seen the larger donut trays where the donut holes are bigger. The one I bought, the donut are about 1.5 inch in diameter

after baking, remove, then decorate by dipping it in melted chocolate. the other one, does not need baking again.
