This cupcake is just perfect. The texture and taste is soooo good. My family member loves them so much! You can skip the lemon galze as the cake taste soo good on its own. I modified the recipe a bit here. I replaced the flour by using "Cake Flour"

Ingredients:
(Makes 6) Adapted from Temp: Cupcakes to Excite by Betty Saw

65g cake flour
1/4 tsp baking soda
1/4 tsp baking powder
65g cream cheese, at room temperature
68g butter, at room temperature
70g castor sugar
1/2 tsp grated lemon rind
1 nos. medium (Grade B) eggs, at room temperature
1/2 tbsp lemon juice

Lemon Glaze
2 Tbs Lemon Juice
150g Icing Sugar


Method
Line muffin pan with paper cups.
Sift cake flour, baking soda and baking powder into a mixing bowl. Set aside.
Cream butter and cream cheese until light and creamy for 8-10 minutes. Add castor sugar and continue to mix until light and fluffy.
Beat in eggs, one at a time. Stir in lemon rind and lemon juice.
Finally, fold in sifted flour in (1).
Divide batter evenly into paper cups. Bake in preheated oven at q 160 degC for 20 minutes
Remove the pan from the oven. Rest for 10 minutes before removing the cupcakes from the pan Cool on wire rack.
Meanwhile, prepare lemon glaze. Heat lemon juice in microwave on high for 15 seconds. Pour into sifted icing sugar and whisk till smooth. Fill lemon glaze into a piping bag and use a writing nozzle to pipe the glaze onto cupcakes. Decorate with lemon zest and other decoration of your choice. Chill before serving.

Method for Lemon Glaze:
Warm Lemon Juice in microwave slightly warm stir in icing sugar.

err.... what is the difference between normal flour with cake flour?

Taken from Jo's website

Normal Flour / Plain Flour

Contains slightly lower protein content than bread flour.
Readily available in most grocery shops
For general baking, or can be compromised for making cakes when cake/superfine flour is not accessible.
It is sometimes mixed with high protein flour, or just by its own for chinese pastries.


Cake Flour

Milled from soft wheats.
Contains low quantities of proteins.
Soft and smooth.
For making high ratio, chiffon cakes and pastries, and for preparing gravies and sauces.

Baked these cupcakes today using all purpose flour since do not have cake flour. Very delicious... yummy

Enne, which part of KL are you in? Bake with Yen also carry these type of muffin cups too but different patterns. There are quite a few Bake with Yen branches.

I got mine from "Bake Ideas" Bandar Damai Perdana, Cheras
I think there is a member from other forum mention "Chang Tung",Tmn Megah carries that cupcake.
Let me know the price if you happen to get them.
I remember i got mine at around Rm40++ (250 pcs)

Hi all,

I'm at Old Klang Road. Any bakery shop selling those cups here? I'm not familiar with PJ area.

Waa Simone, you bought 250 cups at one go? selling your cup cakes or what? The last I bought some paper cups was about 40 pcs and it lasts forever! kekekeke...it shows how much I bake la.

Anyway, I baked a batch of the Lemon Cheese Cupcakes and the texture was rather crumbly though soft and delicious. Is that normal? Also, anyone knows y the top of the cakes are damp when its cold?

Hi Enne, hmmm Old Klang Road...I'm not sure if they are any bakery shops nearby there..but have you been to Bake with Yen in Puchong?

There are many varieties of baking cups there, but I'm not sure if they have the white plain ones though..

Enne : Actually i've been looking for this type of paper cup since i saw them in blog. So when i see them selling at bakery shop near my area , i buy lol. At 1st i also buy in small batch eg :20 pcs But hor, i love to bake cupcakes so much- i decided to buy 250pcs (slightly cheaper )
grin Oh these cute papercup look so elegant and nice . The receiver though you buy the cake from shop!

You say the cake damn ? I'm not sure , mine usually very soft and light

Yeah i'm sell cupcakes as well Very Happy but not all using that $$ papercup lah.

Old Klang Road the nearest i think is Sri Petaling- Same row as Thong Kee Egg Tart. But limited supplies though. You can find very basic baking stuff there but not sure on that paper cup.

Chang Tung and the one i'm using is called "Solo Souffles Paper Cup" 3 oz

Simone, I know where Tong Kee Egg Tarts shop in Sri Petaling...very near where I'm staying! The baking shop you were saying is actually a baking school, right?

Ok, will go try my luck there. I normally get my baking stuff at a shop call Militia in OUG but they just have the cardboard type leh. Ok la but I still like your cups best!

With regards to the lemon cheese cupcakes, mine was soft and light too...but very crumbly the next day and top was a little damp. Too much sugar?

I bought mine at Bake with Yen @ RM 9.00 for 210 pieces. This is the smallest size.

Also what do they call that papercup at Bake with Yen ?

I finally remembered to check the measurements of the cupcake liners.

It's 5 cm (2") in height, 6 cm in diameter (on top) & 4.5 cm in diameter (bottom). It's very small. but good for small eaters.

It's not pleated. Actually, I find it quite thin. It tears quite easily if you pick it after baking. If you want, you can have some to try first before buying.

Chang Thung also has it. RM 4.50 for 100 pcs. same quality. I thought it was a bigger size but when I got back, found that it's just the same.
