I used my home made tom yam paste for this..
2 tbsp home made tom yam paste
200g cooked chicken fillet(shredded)
1 tbsp olive oil
1 bunch of fresh coriander leaves(chopped)
salt to taste
1. Heat up wok with olive oil and add tom yam paste to heat up
2. Add shredded chicken, water and stir fry using high fire to mix evenly.
3. Add chopped coriander leaves and salt to taste.
4. Turn off fire, serve immediately with warm rice.
You can use any leftover Roast meats(from Christmas dinners) to do a quick and easy stir fry.
Alternative, you can use Prawns, Squids, or even Crabs and use this paste for easy stir fry.
