This is an original recipe,feel free to halve it as this serves about 6 to 8 people as a main course!!

YOU NEED:
500g dried penne
300g streaky bacon
300g ham
400g fresh mushrooms OR 1 and 1/2 can button mushrooms
1 large white onion
1 tsp minced garlic
2 bay leaves
2 tbsp olive oil
1 tbsp butter
1/2 cup white wine
1 can cream of mushroom soup
fresh milk
salt,black pepper and sugar
pinch of nutmeg
250g (or more) grated mozzarella cheese
black pepper and chopped parsley to serve

HOW:
Finely chop up onion,bacon,ham and mushrooms. Put on a large pot of salted water to boil.
In a deep pan or wok,heat up oil and butter over medium heat,saute bacon,onion,garlic and bay leaves till fragrant,add 1/2 tsp each salt,sugar and black pepper. Saute for about 4 minutes till onion is caramelised.
Add mushrooms,toss to mix,saute for another 3 minutes. Keep the heat high,or mushrooms will start to stew.
Pour in white wine and reduce till thick.
Preheat oven to 220C,place rack on the higher rack so you can grill pasta later.
Your water should be boiling at this stage,chuck in the pasta,stir with a chopstick and leave to boil.

Then,turn off heat for sauce. Discard bay leaves. Mix in mushroom soup,one and half soup can worth of milk and half can of water. Add ham. Turn heat back on,simmer till thickened,add nutmeg and check the seasoning,it should be slightly more salty than usual,as the pasta is tasteless. Turn heat off for sauce once it has thickened,about 4 minutes worth of simmering.
Drain the pasta,add to sauce and mix to combine.
Pour into an oven proof dish,sprinkle evenly with cheese and grill till bubbly and golden. Sprinkle on more black pepper and perhaps some parsley (dried or fresh is fine) to serve.
