|A lovely buttery potato croquette, best served with a garlic aioli or saffron aioli.
5 medium potatoes, peeled and diced
1/4 cup butter, softened
1 tbsp olive oil
2 tbsp minced dill
1 tsp salt
1/2 tsp lemon juice
1/2 tsp black pepper
1/4 tsp white pepper
1/4 cup shredded carrot (optional)
1/2 cup flour
2 eggs (beaten in a bowl)
3 cups panko breadcrumbs
Placed diced potatoes in cold salted water in a large pan. Bring to a boil and boil till potatoes are fork tender. Drain potatoes and mash with olive oil and butter. Add in salt, pepper, lemon juice and dill. Add in shredded carrot, if using.Let cool.
To the potato mixture, add in 1 egg. Stir to combine. Chill mixture for 10 mins.
Roll chilled mixture into balls and dredge with flour. Coat with the beaten egg and roll in breadcrumbs. Chill for 30 mins and up to 2 hours.
To fry, heat some canola oil in a pan. Deep fry balls till golden brown. Drain. While hot, sprinkle lightly with fine salt.
Serve with aioli.
