well what I do is just buy a lemon and grate its skin with a small sized grater and voila, lemon zest!

Wai Fun never mind can keep for more cakes..heehee!
And I must confess it is absolutely delicious when chopped and stirred into decent softened vanilla ice cream with a healthy dash of rum or brandy.
Just refreeze to set...another quick yet unique dessert.

This cake is sweeter than conventional cheesecakes...not much of a strong cheese taste also...but it's cos I like it this way---I dislike cheesecakes with a strong cheese taste. However,served in small slices,it will be just nice.

Lemon zest is obtained as Eunice says...however,be careful to grate off the yellow portion only---the white pith beneath is slightly bitter.

Eunice, so the lemon zest is supposed to be the yellow portion (outer layer) only or including the white fibre? Need to know how "deep" to grate. If it's just the outer layer, won't it be bitter, like orange skin?
