Takes a little extra work, but it's worth it. An original creation.

Ingredients:

2 tsp olive oil
1 white onion, diced
2 garlic cloves, crushed
750g ground beef
2 x 400g cans Italian diced tomatoes
100ml dry red wine
1/4 cup tomato paste
Salt & Black pepper, to taste
4 fresh lasagne sheets (you could use instant)
1 cup grated mozzarella

Bechamel Sauce:

1 litre whole milk
2 bay leaves
1/4 tsp ground nutmeg
60g butter
60g all purpose flour
1 cup finely grated parmesan cheese (the real stuff!!!)
Salt & white pepper to taste


Method:

Heat oil in a frying pan over medium heat. Add the onion and garlic and cook, stirring, for 5 minutes till soft. Add the beef and cook, stirring to break up any lumps till there is no pink left in the beef.

Add tomatoes, wine and tomato paste, and bring to the boil. Reduce heat to low.

Simmer, uncovered, stirring occasionally, for 30 minutes or until sauce thickens slightly. Remove from heat.
Season with salt and pepper.

To make the cheese sauce,

Combine milk and bay leaves in a saucepan and bring to a simmer over medium heat. Remove from heat and set aside for 15 minutes to infuse.

Remove bay leaves from milk.

Melt the butter in a large saucepan over medium-high heat. Add the flour and cook, stirring, for 1-2 minutes. Remove from heat.

Gradually pour in half the milk, whisking constantly until mixture is smooth. Gradually add the remaining milk, whisking until smooth and combined.

Place saucepan over medium-high heat and bring to the boil, stirring constantly, for 5 minutes or until sauce thickens and coats the back of the spoon. Remove from heat. Add the parmesan and stir till melted..

Season with nutmeg, salt and white pepper


Preheat oven to 180
