|Do not reduce the sugar in the recipe as this will lead to the formation of ice crystals in the ice cream :o)
500ml heavy cream
5 egg yolks
3/4 cup caster sugar
2/3 cup passionfruit pulp/puree (strained)
1 tsp pure vanilla extract
1 tbsp Vodka
Bring milk to a simmer over low heat.
Meanwhile, whisk egg yolks and sugar in a bowl until thick and pale.
Gradually stir 1/2 of the hot milk intto the egg mixture, whisking constantly while doing so.
Pour mixture back into the remaining milk in the saucepan and place over low heat. Whisk constantly and cook for till thickened and till custard coats the back of a spoon.
Do not boil mixture or you will end up with scrambled eggs.
Set aside for 10 minutes to cool slightly. Stir in the cream, vodka, vanilla and passionfruit pulp.
Cover with plastic wrap placed against the surface of the custard and chill overnight.
Place into an ice cream maker and churn according to your machine's instructions.
