Chicken Meat balls(rec n pic)

Ingredients
300g minced chicken
10 pcs water chestnuts(skin removed, chopped)
100g bamboo shoots(from canned, discard liquid)
2 tbsp Fish sauce
1 tsp sugar
1 egg(beaten)
50g breadcrumbs(I used the Japanese ones)

batter
100g Glutinous Rice Flour
50g rice flour
100g plain flour
1 tbsp Double action baking powder
100ml water

Method
1. In a large mixing bowl, add all the ingredients together and mix evenly.
2. Leave it aside for 20 mins.
3. Mix batter ingredients and leave it aside for 20 mins.
4. Heat up wok with cooking oil.
5. Shape meat into a ball and drop into the batter to coat evenly.
6. Dish out the meatball from the batter bowl and add into the hot oil to cook.
7. Once the meatball turns golden brown, remove and drain excess oil.
8. Serve warm.

Goes great with mayo, chilli sauce.

Can these balls be kept frozen for long? Thought of making for my dd this holidays. yummy

Can be frozen. Just cook everything. On the actual day, just thawed and roast/toast in oven at 200C for 15 mins. Don't deep fry again or it will be too oily.

I still have some leftovers which I am going to make a sweet chilli stir fry sauce with it. later show u photo island yummy

Thanks. Just to confirm, I need to fry all the meatballs. Just thaw the leftovers, pop them into the oven toaster. love u
