This was created for a supplier selling gourmet ingredients, organic



Yields 200g
Ingredients
3 eggs, beaten
100g sugar**
400ml organic Soy milk(I use Pacific brand)*
10 pcs pandan leaves, tear each leaf in the center

Method
1. Mix soy milk with beaten eggs and run it thru a sieve to remove any egg whites lumps.
2. Add all the ingredients into a wok, turn on the heat
3. Stir with a wooden spatula over low heat.
4. Cook till mixture turns sticky and dry
5. Discard pandan leaves
6. Store in air tight jars and straight into the fridge.

Notes
The Soy milk I use was unsweetened and organic. It costs S$4.60 for a pack of 1 litre. You can substitute it with your home made soy milk or get other brands.

Sugar added: variable based on taste and preference. If you use Soy milk that is already sweetened, reduce the sugar added by 20g.

you mean before storing ? yes..or water droplets will form inside the jar.
