This is the yummy pancake recipe that I'll definitely keep for life! This is it if you like your pancakes to be tall, and super fluffy!

Ingredients
100g self-raising flour
2 tbsp caster sugar
a pinch of salt
2 eggs, seperated
75ml milk
1tbsp vegetable oil
1/2 tsp vanilla essence

Method
1. Sift flour into a mixing bowl, stir in sugar and salt (Mix well).

2. Make a well in the center of flour, add egg yolks, milk, vanilla essence and oil. Stir to make a smooth batter.

3. Whisk egg white in a clean, dry bowl till stiff. Stir in 1/4 of the egg whites to the batter to lighten it, then FOLD in the remaining egg white carefully.

4. Heat a non-stick frying pan and brush it lightly with a little oil. Drop tablespoon of batter onto the frying pan (Leaving 2 cm space in between).

5. When bubbles appear, flip the pancake and cook till it turn golden brown. Serve while its hot.

I usually eat mine with some apple ribena sauce. yummy

Hi Hi Mianbao,

Hmm.. I make the pancakes mini (approx 6-7cm). Can make approx 10 pancakes and above. I couldn't really rmb cos i usually make and eat at the same time.. hehehe!

I usually use up all of the pancake batter, and those unfinished pancakes i'll keep in the fridge, and heat up the pancake the next morning..

I'm not sure of the exact way of storing the pancakes and how long I can store these.. Sorry.. =P

But its a nice pancake recipe that really worth the effort! Lastly hope ur kids will like it! =)

Hi Carrie,

I tried your recipe and it was so good.. much much better than the pre-mix i used to buy. Smile love

The pancakes turned out fluffy and nice. I followed your recipe and managed to make about 17 mini pieces (about 4cm diameter).

Hello Ponine!

Im so glad that you like this pancake recipe! Recently my sis bought a waffle maker, and i tried making some waffle using this recipe, it taste as fabulous!! Crispy on the outside, soft and fluffy inside! Hehehe! To make it more sinful, I serve it with melted chocolate, double Yum Yum! Kekek!

I used a waffle maker to make this pancake and it taste really good.

Hello zermatt-gal,

Actually I use arm power to whisk the whites in this recipe.. really trains the arm power! hehe.. actually is that im lazy to wash the mixer.. hee.. But if for other recipes that requires large amt of whites, I'll definately use the mixer! keke!
