This is cooked by Seok Buay. Traditionally made with Pork meat. Fish Maw is a preserved foodstuff from the fish's belly. You can get this from Chinese shops in Chinatown in your home country. This dish is often served during chinese new year. But these days, many people can afford this all year round.

This is her family's heirloom recipe. I didn't add pork for this for the day I cook for dinner on Monday(2 Feb) as my maid is muslim. So I just did a chicken stock version with fish balls and fish maw and all the vegetables.

The above photo is an old archived photo taken in Aug 2004.

The meat balls are hand made by Kim San, Seok Buay's hubby. I was there when this dish was made. It was so delicious!

Ingredients
4 pcs of dried/preserved Fish maw(soaked in hot water to soften)
20 pcs ofMushroom(soaked in hot water, cut into half)
25 pcs of fresh Fishballs(get this from a wet market)
300g minced pork meat
200 g minched fatty pork meat
1 Cabbage(cut into small pieces)
2 litres Water
1 litre rich chicken stock
coriander leaves and Chinese parsley and fried shallots to garnish
Salt and pepper to taste

Seasoning for meat: add to pork meat, shaped into meatballs
1 tsp salt
1 tsp ground white pepper
1 tsp sugar


Method
1. Boil chicken stock in a large pot till boiling.
2. Add cabbage, mushrooms to cook.
3. Once cooked, dish out and set aside.
4. Add remaining water to boil.
5. Add fish maw, fishballs and meatballs to cook for 5 to 10 mins.
6. Dish out and set aside.
7. Add remaining water, stir to mix. cook for another 15 mins.
8. Season with salt and pepper to your taste.
to serve, add hot soup in a bowl. Add cooked ingredients like meatballs, fish balls and fish maw in it. Garnish with chinese parsley.

Buay and Kim San will be leaving for China by mid year. They are going there for life..I heard. To realized their dream to build homes for poor kids, to educate them and to teach them Basic English. Bro Kim San has quit from our church as a full time pastor. He will need to find pastoral job in China some how. But in China, its difficult. As Christianity is still a forbidden religion there.

Do pray for them.. Smile
