Ingredients A
============

1 whole chicken - cut into 8- wash and drain
1 tspn tumeric
1 tspn salt
oil for cooking

Methods:-

Mix all the ingredients into the chicken and marinate for 5 to 10 mins.
Heat the wok and pun in the oil and fry the chicken till cook and lightly crisps.
Drain with the kitchen papers.put aside.

Ingredients B
===========

15 stalk Dry Chillies(Chilli kering in malay)*
3 Big Onions - peel the skin *
5 pieces Garlic - peel the skin *
1 inch old Ginger peel the skin *
1 lemongrass- pound only
1 tblspn Belachan*

1 Tomato-cut into 4
1/2 tin of Tomato sauce -I use Hunts brand..
3 lime leaf -wash and slice thinly
Salt and sugar - Approximately
Cooking oil.
1/2 cup waters

2 stalk coriander leaves - cut finely for garnish.

Methods:-

Blend * with a lit bit of water untill become a paste.
Heat a Wok and pour it as enough oil with medium fire.
Put in lemongrass and follow up by the chillies paste and fried it till frangrance and oil coming out with small fire. Appro about 20 to 30 mins
Put in the lime leaves and keep stiring.
After that follow by Tomato sauces and and a bit of waters, Keep on stirring until it become thick and then put in chickens keep on stir till it become all even.
At this moments put in Tomato slice and salt and sugar. If the sauce become too thick , you can add abit more waters.
leave the dish cook another 5 mins or until it become like sambal...
Please taste the sambal. it should be sour, sweet and spicy...
Once you like the taste , off the fire and garnish it with Coriander leaves and Fry onions...

P/s: you can add green peas or fried Potato into it...and you can eat it with ketupat Rice, beryani rice or yellow rice..Some people make Ayam masak merah do not like chillies paste so much due to too spicy.. but I like it this way and it can last to 3 or 4 days..if you know how to care the dish in proper keep and heats.
Beside Chicken, you can use Beaf, mutton and Fish...
For Fish you need to fried like Chicken.
For Beef and Mutton you need only to boil until cook and the soup you can use to add in this dish, replace it with the normal waters..

My gurlfriend chinese have tried with pork.. with she do same methods.. boil to cook..and the results is Thumbs-up...

lazymine - the Hunts tomato sauce... is that the same as the usual maggie tomato sauce or is it puree? how big is your 1 tin?

Lazymine, Do we blend the dried chillies too? There's no "*" on dried chillies grin

i cooked this on Sunday & it went very well with buttered pandan rice. thanks for sharing this lovely recipe. i will certain cook it again. Smile
