|Hi, I've been muffin baking like crazy lately, and have decided to share this muffin recipe which incorporates whole oranges in the mix. The idea was from Luvzbaking's use of whole oranges into her pound cake.
Orange Muffin Recipe (Makes 12)
245g all-purpose flour
100g Caster sugar
50g light brown sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs (60g with shell), lightly beaten
113g unsalted butter, melted and cooled
455g whole orange, blended
1 teaspoon pure vanilla extract
100g White Chocolate Chips
1. Preheat oven to 180degC.
2. Boil approximately 3 oranges in water for about 40-50mins. Remove from water, slice open to remove seeds. Place boiled oranges into a food processor and blend. Set aside.
3. Using a large mixing bowl combine the flour, sugars, baking powder, baking soda, salt, and white chocolate. Whisk together and set aside.
4. In another bowl combine the blended oranges, eggs, melted butter, and vanilla. With a rubber spatula / wooden spoon / dough whisk, lightly fold the dry ingredients into the wet ingredients until just combined and batter is thick and chunky. I normally try to combine everything in 15-20 strokes. (Do NOT overmix, over mixing will give you batter which will result in tough, dense muffins.)
5. Scoop the batter into the prepared muffin tins and place a slice of orange on top (optional) of each muffin for garnish. Bake about 25 minutes.
This recipe will give you fluffy orange scented muffins with a strong citrius taste. Very good for orange lovers.
The sugar has already been reduced and will give you muffins that balance the sour-ness of the orange.
