I did this as a LIVE baking demo at my store yesterday afternoon. Was very well received...!
Later that night, a few families who came to watch the demo, drop by to get the ingredients to bake again for their kids. they all say its super delicious.
Must be eaten when its warm..
Makes 12 muffins
Ingredients:
375g self raising flour
200ml Buttermilk(Dairy Farmers)
125g Cheddar Cheese(diced)
60g butter(salted, melted)
1 egg
80 g brown sugar
Method:
1. In a mixing bowl, add butter and sugar to mix.
2. Add egg and milk to beat/mix together.
3. Add flour to mix till its well mixed.
4. Add diced cheese, stir to mix evenly.
5. Line muffin tray with paper muffin cups.
6. Pour batter mix till 3/4 full.
7. Baked in preheated oven 180C for 20 mins.
Notes:
You can use other types of cheese for this recipe. _________________ Gina

Hi Gina,
Making muffins now. Why is the mixture dough like? Thought it was suppose to be more like cake mixture? Different from how I make other muffins.
I followed everything in the recipe. Is some other liquid missing? |

sorry, saw this too late.
Muffin batter does not look like cake batter. In fact, its very rough, look more like not evenly mixed. It shouldn't look liquidy.
but when its baked, its delicious! I did this as a demo outside my shop sometime ago. everyone bought a pack of buttermilk almost immediately. _________________ Gina
